豉汁煎釀鯪魚

材料:
順德家鄉釀鯪魚 1條
欖角 6粒
豆豉 半湯匙
上湯 500g
乾蔥 10g
蒜蓉 10g
蔥花 適量
芫茜 適量
果皮 適量
蠔油 適量
胡椒粉 適量
老抽 適量
糖 適量
生粉水 適量
𝗦𝗧𝗘𝗣 ➊ 家鄉釀鯪魚提前解凍,慢火兩邊煎至金黃
𝗦𝗧𝗘𝗣 ➋ 將煎好的釀鯪魚切成塊
𝗦𝗧𝗘𝗣 ➌ 中火落蒜蓉、乾蔥、欖角及豆豉爆炒
𝗦𝗧𝗘𝗣 ➍ 加入上湯及其餘的調味料
𝗦𝗧𝗘𝗣 ➎ 將釀鯪魚回鑊冚蓋慢火炆煮4分鐘,即可出鍋

Traditional Stuffed Dace Fish
This dish of Stuffed Dace Fish in Black Bean Sauce is a renowned signature banquet dish from the Shunde region of Guangdong province. Using dace fish as the main ingredient, it involves a multi-step manual preparation process and the use of various seasoning ingredients.
Not only does this dish showcase the exceptional culinary skills of Cantonese cuisine, but it also embodies the traditional Chinese food culture principle of "fish as the supreme". During festive gatherings and banquets, fish is an indispensable element. However, the Stuffed Dace Fish dish requires extremely high-level cooking techniques from the chef, which is why it has become a rarity in restaurants and eateries nowadays.
Ingredients:
Cooked Fish 1pc
Black olives 6pcs
Fermented black beans 1/2 tablespoon
Broth 500g
Dried shallots 10g
Minced garlic 10g
Chopped green onions sliced
Coriander sliced
Fruit peel sliced
Oyster sauce sliced
Pepper sliced
Dark soy sauce sliced
Sugar sliced
Corn starch water sliced
𝗦𝗧𝗘𝗣 ➊Defrost the Dace Fish in advance and fry on low heat until golden brown on both sides.
𝗦𝗧𝗘𝗣 ➋ Add the fried stuffed dace wonton pieces
𝗦𝗧𝗘𝗣➌ to medium heat and stir-fry the minced garlic, shallots, olives, and fermented black beans.
𝗦𝗧𝗘𝗣 ➍ Add the broth and remaining seasonings.
𝗦𝗧𝗘𝗣 ➎ Return the stuffed dace to the wok, cover, and simmer for 4 minutes. Done!
