陳村粉 80g
鹽 1茶匙
生粉 1湯匙
雞粉 1湯匙
花椒油 適量
蒜蓉醬 適量
豆豉醬 適量
𝗦𝗧𝗘𝗣 ➊ 用豆豉醬醃製金鳳魚魚腩加入生粉撈勻
𝗦𝗧𝗘𝗣 ➋ 在筲箕上鋪上陳村粉再放鯪魚球
𝗦𝗧𝗘𝗣 ➌ 再放絲瓜、鯪魚球、金鳳魚魚腩及花甲
𝗦𝗧𝗘𝗣 ➍ 絲瓜面上鋪上蒜蓉醬,先蒸5分鐘
𝗦𝗧𝗘𝗣 ➎ 用花椒油調味無骨脆金鳳魚片,再加鹽、雞粉及生粉
𝗦𝗧𝗘𝗣 ➏ 撈勻鋪平,再蒸3分鐘完成 !

Steamed Fish Slices and Fish Balls in Bamboo Baskets
Ingredients:
Boneless Crispy Tilapia Fish Fillets 200g
Tilapia Fish Belly
Shunde Fish Ball 200g
Clams 150g
loofah 1pcs
Chen cun rice noodles 80g
Salt 1 tablespoon
Cornstarch 1 tablespoon
Chicken powder 1 tablespoon
Peppercorn oil as needed
Garlic sauce as needed
Fermented black bean sauce as needed
𝗦𝗧𝗘𝗣 ➊ MarinateTilapia Fish Belly in fermented black bean sauce, then add cornstarch and mix well.
𝗦𝗧𝗘𝗣➋ Spread Chencun rice noodles on a bamboo basket.
𝗦𝗧𝗘𝗣 ➌Add the loofah, fish balls, Tilapia Fish Belly and clams.
𝗦𝗧𝗘𝗣 ➍Sprinkle garlic sauce on the loofah and steam for 5 minutes.
𝗦𝗧𝗘𝗣 ➎Season Boneless Crispy Tilapia Fish Fillets with Peppercorn oil, then add salt, chicken powder, and cornstarch.
𝗦𝗧𝗘𝗣 ➏Mix and spread evenly, then steam for another 3 minutes. Done!
